Veggies and Lentils in Peanut Sauce



In a tasty peanut sauce, this vegan and gluten-free dish has healthy lentils and a rainbow of colorful vegetables. It's easy to make and full of vitamins, fiber, and protein.

Ingredients:

  • 1 cup lentils
  • 2 cups mixed veggies such as carrots, bell peppers, and broccoli
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1/2 cup water
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Instructions:

Rinse the lentils and cook them as directed on the package until they are soft

In a different pan, cook the mixed vegetables until they are just starting to get soft

To make the sauce, mix peanut butter, soy sauce, maple syrup, rice vinegar, garlic, ginger, and water in a small bowl with a whisk

Add the lentils to the pan after they are cooked, and then pour the peanut sauce over them

Mix everything together well, then let it cook on low heat for 5 to 7 minutes, until everything is hot and the sauce gets a little thicker

Add pepper and salt to taste

Put it on top of cooked quinoa or rice
