A tasty and filling keto-friendly dish with roasted Brussels sprouts, melted pepper jack cheese, and a peanut butter drizzle on top.
Ingredients:
- 1 lb Brussels sprouts, trimmed and halved
- 2 tbsp olive oil
- Salt and pepper to taste
- 1/2 cup shredded pepper jack cheese
- 2 tbsp creamy peanut butter
Instructions:
Preheat oven to 400F 200C
In a large bowl, toss Brussels sprouts with olive oil, salt, and pepper until evenly coated
Spread Brussels sprouts in a single layer on a baking sheet lined with parchment paper
Roast in the preheated oven for 20-25 minutes or until tender and slightly caramelized, stirring halfway through
Remove Brussels sprouts from the oven and sprinkle shredded pepper jack cheese over the top
Return to the oven and bake for an additional 3-5 minutes or until the cheese is melted and bubbly
Once done, drizzle creamy peanut butter over the cheesy Brussels sprouts
Serve hot and enjoy!
