Ingredients:

  • 4 cups of ripe pears, peeled, cored, and chopped
  • 2 cups of honey
  • 1 vanilla bean, split and seeds scraped
  • 1 lemon, juiced and zested
  • 1/2 teaspoon of cinnamon
  • 1/4 teaspoon of nutmeg
  • Pinch of salt
  • 2 tablespoons of pectin optional for thicker jam

Instructions:

Put the chopped pears, honey, and vanilla bean seeds in a big saucepan

To the saucepan, add the lemon zest, juice, nutmeg, cinnamon, and a small pinch of salt

To allow the flavors to meld, thoroughly stir the mixture and let it sit for 15 minutes

Transfer the mixture to a boiling point by placing the saucepan over medium-high heat

After lowering the heat to low, simmer the mixture for 30 to 40 minutes, stirring now and then, until it thickens

Add the pectin and cook for an extra five minutes if you'd like your jam to be thicker

Take out the vanilla bean and throw it away

After sterilizing the jars, fill them with the hot jam, leaving a 1/4-inch headspace

Place the lids on the jars and canner them for ten minutes in a water bath, or store them in the refrigerator if using right away

Let jam cool to room temperature and then store in a cool, dark location

Savor your delectable Pear Vanilla Honey Jam and Honey Sweetened Preserves on toast, biscuits, or as a sweet garnish for desserts!
