Ingredients:
- 1 cup dried green or brown lentils, rinsed
- 2 medium beets, peeled and diced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish optional
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
It will take about 34 minutes of cooking after adding the diced onion and garlic
Add the lentils, cumin, smoked paprika, salt, and pepper, along with the diced beets
Add the vegetable broth and bring it to a boil
Lower the heat, cover, and let it simmer for 25 to 30 minutes, or until the lentils are soft and the liquid is gone
If necessary, change the seasoning
If you want, you can serve it hot with fresh parsley on top
