Pancake Breakfast Tacos



Pancake Breakfast Tacos are a delightful twist on traditional breakfast. These savory pancakes are filled with a flavorful mixture of sausage, vegetables, and cheese, making them a perfect choice for a delicious and satisfying breakfast or brunch.

Ingredients:

  • 1 cup pancake mix
  • 1/2 cup milk
  • 1 egg
  • 1/2 cup cooked sausage crumbles
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup diced tomatoes
  • 1/4 cup salsa
  • 1/4 cup sour cream
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • Cooking spray or oil for the pan

Instructions:

In a mixing bowl, combine the pancake mix, milk, and egg

Stir until well combined to form the pancake batter

Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or oil

Pour a small amount of pancake batter into the skillet to make a small pancake, about 4 inches in diameter

Cook until bubbles form on the surface, then flip and cook the other side until golden brown

Repeat this step to make multiple small pancakes

While the pancakes are cooking, in a separate skillet, saut the sausage crumbles, bell peppers, onions, and tomatoes until the vegetables are tender and the sausage is cooked through

Once the pancakes are ready, assemble the tacos

Place a small pancake on a plate, add a spoonful of the sausage and vegetable mixture, sprinkle with shredded cheddar cheese, and top with salsa, sour cream, and chopped cilantro

Season with salt and pepper to taste

Fold the pancake over the filling to create a taco shape, and secure it with a toothpick if needed

Repeat the assembly process for the remaining pancakes and filling
