Ingredients:
- 2 cups all-purpose flour
- 1/2 cup vegan butter, softened
- 1 cup granulated sugar
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- Vegan sprinkles or colored sugar optional, for decoration
Instructions:
Preheat oven to 350F 175C
In a large mixing bowl, cream together vegan butter and sugar until light and fluffy
Add almond milk and vanilla extract, mix until well combined
In a separate bowl, sift together flour, baking powder, and salt
Gradually add dry ingredients to the wet ingredients, mixing until a dough forms
Roll dough into small balls and place them on a baking sheet lined with parchment paper
Using the bottom of a glass, flatten each ball slightly
If desired, decorate with vegan sprinkles or colored sugar
Bake in the preheated oven for 10-12 minutes, or until edges are lightly golden
Remove from oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely
