This sweet and spicy roast chicken is a flavorful delight, combining succulent chicken with caramelized carrots, sweet dates, and crunchy pistachios. The marinade infuses the chicken with a perfect balance of sweetness and heat, making it a satisfying dish for any occasion.
Ingredients:
- 1 whole chicken
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 teaspoon chili flakes
- Salt and pepper to taste
- 4 carrots, peeled and sliced
- 10 dates, pitted and chopped
- 1/4 cup pistachios, chopped
Instructions:
Warm the oven up to 190C 375F
Put honey, soy sauce, chili flakes, salt, and pepper in a small bowl and mix them together
Brush the chicken with the sauce that you just made before putting it in a roasting pan
Mix the carrots, dates, and pistachios with the rest of the sauce, then put them around the chicken in the pan
Place in an oven that has already been heated and roast for 60 to 70 minutes, or until the chicken is fully cooked and the vegetables are soft
In the middle of cooking, baste the chicken with the pan juices
Take it out of the oven when it's done and let it cool for 10 minutes before cutting it
Carrots, dates, and pistachios that have been roasted should go with the chicken
